Grilled Garden Pizza Recipe

Ingredients:

12" Pizza whole wheat dough, can use freezer dough
2 tablespoons
olive oil
1
Eggplant, medium sized, cut into coins 1/2" thick
1
Sweet potato, medium sized, peeled, sliced thinly
1
Red pepper, medium sized, sliced, 1/4" thick
6 oz
Tomato sauce, your favorite brand
6 oz
Shredded lowfat mozzarella
1/2 cup
Chopped fresh basil, for garnish
Salt and pepper to taste

cutting board

Setting Up: 
Step 1:
Prepping the Veggies
Have your A.G. (Adult Guide) work with you to slice the eggplant, red pepper, and sweet potato on the cutting board. Put into a bowl. Toss vegetables with olive oil, salt and pepper to taste. Chop the basil and set aside in a bowl for later.
Step 2:
Prepping the Dough
Flatten the pizza dough until about 1/8 inch thick. Brush with olive oil. Season with salt and pepper.
Cooking Steps: 
Step 3:
Turn on the Grill
Have your A.G. (Adult Guide) turn on the grill.
Step 4:
Grill the Veggies
Have your A.G. (Adult Guide) help you grill the vegetables until softened but still a little crunchy. Set aside.
Step 5:
Grill the Pizza
Grill the pizza dough on both sides for about 2 minutes on each side.
Step 6:
Add Toppings
Top with the tomato sauce, mozzarella and grilled veggies.
Step 7:
Finish the Pizza
Garnish with basil. Cut into slices. Serve immediately.
